This is one of my favorite go to recipes for quick and portable snacks for my kids, and for me when I am “bulking.” I also bring enough to share because they are so good and never last long as everyone eats them right up!
My recipe is a variation of the No Bake Energy Bites but I don’t do flaxseed or wheat germ and it was just too sweet for me with all the honey and sweetened coconut, so I changed it for the better and darn they are good!
Ingredients
- 2 Cups old fashioned oats
- 1 and 1/3 Cup toasted unsweetened shredded coconut
- 1 Cup of peanut butter (or almond butter)
- 1/3 Cup Honey
- 1/3 Cup coconut or palm oil (melted or very soft)
- 2 tsp. vanilla
- 1 Cup dark chocolate chips (or dried fruit, nuts, rice cereal etc or a combo totaling 1 cup)
Directions
Toast unsweetened shredded coconut until golden brown on a sheet pan in the oven on 350 degrees for about 5-10 minutes.
Melt coconut oil. Mix oats, toasted shredded coconut, peanut butter, honey and vanilla in a bowl. Add melted coconut oil and mix well. If the mixture is still warm from the melted coconut oil, let it sit a few minutes until completely cool otherwise the chocolate chips will get all melted. Then add chocolate chips. Roll into 24 balls and refrigerate.
24 servings. macros per one ball: 162 calories, 10g carbs, 12g fat, 5g protein.
Other variations:
Try using crispy rice cereal (aka rice krispies) instead of toasted unsweetened coconut. My latast fav is to do half and half. Do: 2/3 cup unsweetened coconut and 3/4 cup crispy rice cereal.
