When Reiko sent me this recipe I thought, lime and eggs? hm. So I gave it a whirl and I have got to tell you, THIS RECIPE KNOCKED MY SOCKS OFF! It was SO good! I actually added more lime as I devoured the dish. This is also super easy to adjust to fit your macros and make ahead as well. DIG IN AND ENJOY!!!

For a perfect hard boiled egg where the shell peels of with ease I place all my eggs in a pot. Cover it with water and add a splash of vinegar. Place a cover on the pot.
Turn the burner on med to high. Once the water boils, immediately remove the pot from the stove and let the eggs sit in the hot water for 13 minutes. Keep the cover on the pot.
Once that 13 minute bell rings, drain the hot water and run cold water over the eggs. Boom.
1.) Peel off the shell of the 4 hard boiled eggs.
2.) Chop two of the hard boiled eggs.
3.) For the other two, cut in half, take out the yolks and chop the egg whites. Use the whites, not the yolks.
5.) Place the eggs and the rest of the ingredients in a bowl. You can add chopped onions, broccoli, red peppers etc. Get creative! Top this with some hot sauce or salsa to spice it up!
Tip: This is great made up the night before for a quick breakfast in the morning. Planning ahead for diet success is key!
Adjust the macros as needed: need more fat, leave in a yolk or two or add more avocados. Need less fat, take out a yolk or two.
